Ingredients
– 1 cup rolled oats
– 2 tablespoons chia seeds
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1 cup unsweetened almond milk
– 1 cup grated carrots
– 2 tablespoons honey
– 1/4 cup chopped walnuts (optional)
Instructions
1. – In a medium saucepan, combine the rolled oats, chia seeds, cinnamon, and nutmeg.
2. – Add the almond milk and grated carrots, and bring the mixture to a simmer over medium heat.
3. – Cook, stirring occasionally, for 3-5 minutes, or until the oats are tender and the mixture has thickened.
4. – Remove from heat and stir in the honey.
5. – Spoon the Carrot Cake Chia Oats into serving bowls and top with chopped walnuts, if desired.
