Ingredients
– 1 medium butternut squash, peeled and cubed
– 2 large onions, thinly sliced
– 4 tablespoons unsalted butter, divided
– 1 tablespoon brown sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 1 store-bought or homemade pie crust
– 2 eggs
– 1/2 cup heavy cream
– 1/4 cup grated Parmesan cheese
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Toss the butternut squash cubes with 2 tablespoons of melted butter, brown sugar, cinnamon, nutmeg, and ginger. Spread on a baking sheet and roast for 25-30 minutes, until tender.
2. – In a large skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes, until caramelized and golden brown.
3. – Roll out the pie crust and press it into a 9-inch tart pan. Prick the bottom with a fork and bake for 10 minutes.
4. – In a medium bowl, whisk together the eggs and heavy cream. Stir in the roasted butternut squash, caramelized onions, and Parmesan cheese. Season with salt and pepper.
5. – Pour the filling into the pre-baked tart crust and bake for 30-35 minutes, until the center is set.
6. – Allow the tart to cool for 15 minutes before slicing and serving. Enjoy!
Notes
This tart can be served warm or at room temperature. For a sweeter version, drizzle with honey or maple syrup before serving.
