Ingredients
– 1 sheet puff pastry, thawed
– 1 large onion, thinly sliced
– 2 tbsp butter
– 1 tbsp brown sugar
– 2 oz goat cheese, crumbled
– 1 tbsp fresh thyme leaves
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. – In a skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
3. – Stir in the brown sugar and cook for an additional 5 minutes, until the onions are deeply caramelized.
4. – Roll out the puff pastry on a lightly floured surface and cut into 12 squares.
5. – Place the pastry squares on the prepared baking sheet. Spoon the caramelized onions onto the center of each square.
6. – Top each tart with a sprinkle of crumbled goat cheese and a few thyme leaves.
7. – Bake for 15-20 minutes, until the pastry is golden and puffed.
8. – Season with salt and pepper to taste.
9. – Serve warm.
Notes
These tarts can be made ahead of time and reheated just before serving. For a richer flavor, try using a combination of caramelized onions and shallots.
