Description

Enjoy the comforting flavors of classic cabbage rolls in this easy-to-make soup! This Cabbage Roll Soup Recipe is packed with tender cabbage, ground beef, and a rich tomato-based broth for a satisfying and cozy meal.

Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 head of cabbage, chopped

– 2 cans (14.5 oz each) diced tomatoes

– 4 cups beef broth

– 2 tbsp tomato paste

– 1 tsp dried oregano

– 1 tsp dried basil

– Salt and pepper to taste

Instructions

1. 1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

2. 2. Add the onion and garlic to the pot and sauté for 2-3 minutes until fragrant.

3. 3. Add the chopped cabbage, diced tomatoes, beef broth, tomato paste, oregano, and basil. Stir to combine.

4. 4. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the cabbage is tender.

5. 5. Season with salt and pepper to taste.

6. 6. Serve hot, garnished with fresh parsley if desired.

Notes

– For a heartier meal, serve the Cabbage Roll Soup with crusty bread or over cooked rice or quinoa.

– Customize the flavor by adding a splash of Worcestershire sauce or a pinch of cayenne pepper.

– Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
