Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup diced fresh apricots (or canned, drained)
– 1 cup shelled roasted and salted pistachios, chopped
Instructions
1. 1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
2. 2. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.
