Ingredients

– 8 oz elbow macaroni

– 2 cups shredded cooked chicken

– 1/2 cup buffalo sauce

– 1 cup shredded cheddar cheese

– 1/2 cup shredded mozzarella cheese

– 4 slices of bread

– 2 tbsp unsalted butter

– 2 tbsp all-purpose flour

– 2 cups milk

– 1/2 tsp garlic powder

– 1/4 tsp paprika

– Salt and pepper to taste

Instructions

1. 1. Cook the macaroni according to package instructions. Drain and set aside.

2. 2. In a large skillet, combine the shredded chicken and buffalo sauce. Cook over medium heat until heated through.

3. 3. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk and cook until thickened, about 5 minutes.

4. 4. Remove the sauce from heat and stir in the cheddar and mozzarella cheeses until melted and smooth.

5. 5. Add the cooked macaroni to the cheese sauce and stir to combine.

6. 6. Toast the bread slices until golden brown.

7. 7. Top each toast slice with a generous portion of the buffalo chicken mac and cheese.

8. 8. Serve hot and enjoy!

Notes

For extra flavor, you can add diced celery, carrots, or green onions to the mac and cheese. You can also use a blend of different cheeses to customize the taste. If the mixture becomes too thick, add a splash of milk to thin it out.
