Description

Ingredients

– 1 lb fresh lump crab meat

– 1 onion, diced

– 2 celery stalks, diced

– 3 cloves garlic, minced

– 2 tomatoes, diced

– 4 cups seafood or chicken broth

– 1 tsp Old Bay seasoning

– 1 tsp dried thyme

– 1 bay leaf

– 1/2 cup heavy cream

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. – In a large pot or Dutch oven, sauté the onion and celery in a bit of oil over medium heat until softened, about 5 minutes.

2. – Add the garlic and cook for 1 minute until fragrant.

3. – Pour in the broth and stir in the Old Bay seasoning, thyme, and bay leaf. Bring to a simmer.

4. – Gently stir in the crab meat and heavy cream. Simmer for 10-15 minutes, or until the stew has thickened slightly.

5. – Season with salt and pepper to taste.

6. – Ladle the stew into bowls and garnish with chopped parsley.

Notes

– For a thicker stew, you can mash some of the vegetables against the side of the pot to release more starch.

– Try adding a splash of sherry or white wine for extra depth of flavor.

– Serve with crusty bread or oyster crackers for dipping.
