Description

Ingredients

– 3 tablespoons unsalted butter

– 1 medium yellow onion, diced

– 3 cloves garlic, minced

– 1/4 cup all-purpose flour

– 2 cups chicken or vegetable broth

– 2 cups whole milk

– 1 cup heavy cream

– 4 cups broccoli florets, chopped into bite-size pieces

– 2 cups shredded sharp cheddar cheese

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. – In a large pot or Dutch oven, melt the butter over medium heat.

2. – Add the diced onion and sauté for 5-7 minutes, until translucent.

3. – Stir in the minced garlic and cook for 1 minute until fragrant.

4. – Sprinkle the flour over the onion and garlic, and whisk to combine. Cook for 2-3 minutes, stirring constantly.

5. – Gradually pour in the broth, whisking continuously to prevent lumps from forming.

6. – Stir in the milk and heavy cream. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.

7. – Add the chopped broccoli florets and continue simmering for 10-15 minutes, until the broccoli is tender.

8. – Remove the pot from the heat and stir in the shredded cheddar cheese until it’s fully melted and incorporated.

9. – Season with salt and pepper to taste.

10. – Serve hot, garnished with additional cheddar cheese and fresh parsley if desired.

Notes

– For a thicker soup, you can add an extra 1-2 tablespoons of flour.

– Substitute half-and-half or evaporated milk for the heavy cream if desired.

– Add cooked, diced chicken or bacon for extra protein and flavor.
