Ingredients

– 2 lbs russet potatoes, cut into 1/2-inch thick fries

– 4 large eggs

– 1/2 cup unsalted butter, melted

– 2 egg yolks

– 2 tbsp lemon juice

– 1/4 tsp salt

– 1/8 tsp cayenne pepper


Instructions

1. 1. Preheat oven to 425°F. Spread the fries on a large baking sheet and bake for 25-30 minutes, flipping halfway, until golden brown and crispy.
