Description
Borscht is a beloved, nutrient-rich beet soup that originated in Eastern Europe. This classic recipe features tender beets, savory broth, and a tangy, creamy finish that’s sure to warm you up.
Ingredients
– 3 medium beets, peeled and grated
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups beef or vegetable broth
– 2 cups shredded cabbage
– 2 tablespoons apple cider vinegar
– 1 teaspoon sugar
– Salt and pepper to taste
– Sour cream, for serving
– Fresh dill, for garnish
Instructions
1. – In a large pot, sauté the onion and garlic in a little oil until softened, about 5 minutes.
2. – Add the grated beets, broth, cabbage, vinegar, and sugar. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until beets are tender.
3. – Season with salt and pepper to taste.
4. – Serve hot, topped with a dollop of sour cream and fresh dill.
Notes
For a thicker soup, you can blend a portion of the soup with an immersion blender. This borscht recipe can also be made vegetarian by using vegetable broth instead of beef.
