Description

Tender bok choy simmered in a sweet, spicy, and savory ginger chili sauce – a quick and easy side dish that’s bursting with flavor.


Ingredients

– 1 lb bok choy, washed and cut into 1-inch pieces

– 2 tbsp vegetable oil

– 3 cloves garlic, minced

– 1 tbsp grated fresh ginger

– 2 red chili peppers, thinly sliced (or 1/2 tsp red pepper flakes)

– 2 tbsp soy sauce

– 1 tbsp rice vinegar

– 1 tbsp honey

– Salt and pepper to taste


Instructions

1. – Heat the vegetable oil in a large skillet or wok over medium-high heat.

2. – Add the garlic, ginger, and chili peppers. Sauté for 1-2 minutes until fragrant.

3. – Add the bok choy and sauté for 2-3 minutes, until slightly softened.

4. – In a small bowl, whisk together the soy sauce, rice vinegar, and honey.

5. – Pour the sauce over the bok choy and toss to coat. Simmer for 2-3 minutes, until the bok choy is tender-crisp.

6. – Season with salt and pepper to taste.

7. – Serve hot, garnished with additional sliced chili peppers if desired.

Notes

For extra heat, add more sliced chili peppers or a dash of red pepper flakes. You can also substitute tamari or coconut aminos for the soy sauce.
