– 2 cups cooked rice

– 1 cup chopped bok choy

– 1/2 cup diced carrots

– 1/2 cup diced onion

– 2 cloves garlic, minced

– 2 tablespoons soy sauce

– 1 tablespoon rice vinegar

– 1 teaspoon sesame oil

– 1/4 teaspoon ground ginger

– Salt and pepper to taste

– 1 tablespoon vegetable oil


Instructions

1. – Heat the vegetable oil in a large skillet or wok over medium-high heat.

2. – Add the diced onion and carrots, and sauté for 2-3 minutes until softened.
