Description

Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 eggs

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 2 cups fresh blackberries

– 1 cup shelled pistachios, chopped


Instructions

1. 1. Preheat oven to 350°F. Grease a 9×13 inch baking pan.

2. 2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.

3. 3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

4. 4. Spread half the dough into the prepared baking pan. Top with the blackberries and chopped pistachios. Crumble the remaining dough over the top.

5. 5. Bake for 30-35 minutes, until the top is lightly golden. Allow to cool completely before cutting into bars.

Notes

For a crunchy topping, sprinkle additional chopped pistachios over the crumbled dough before baking. These bars can be stored in an airtight container at room temperature for up to 5 days.
