Ingredients
– 1 tablespoon olive oil
– 1 pound spicy Italian sausage, casings removed
– 1 onion, diced
– 3 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1/2 teaspoon dried oregano
– 1/4 teaspoon cayenne pepper (optional, for heat)
– 1 (15-ounce) can black beans, drained and rinsed
– 1 (15-ounce) can diced tomatoes
– 1 cup long-grain white rice, cooked according to package instructions
– Salt and black pepper, to taste
– Chopped fresh cilantro, for garnish
Instructions
1. 1. In a large skillet, heat the olive oil over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes.
2. 2. Add the onion and garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
