Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 2 cups water

– 2 cups shredded cooked chicken

– 8 ounces egg noodles

– 1 teaspoon dried thyme

– 1 bay leaf

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, heat the olive oil over medium heat.

2. – Add the onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. – Stir in the garlic and cook for 1 minute, until fragrant.

4. – Pour in the chicken broth and water. Bring the mixture to a boil.

5. – Add the cooked chicken, egg noodles, thyme, and bay leaf. Reduce the heat and simmer for 10-15 minutes, or until the noodles are tender.

6. – Season with salt and pepper to taste.

Notes

For a heartier soup, add diced potatoes or mushrooms. You can also use shredded rotisserie chicken to save time.
