Description

Ingredients
– 1 lb beef stew meat, cubed
– 2 tbsp olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 potatoes, peeled and cubed
– 4 cups beef broth
– 2 cups water
– 2 tsp dried thyme
– 1 tsp dried oregano
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and brown on all sides, about 5 minutes.
2. – Add the onion, carrots, and celery to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
3. – Pour in the beef broth and water. Add the potatoes, thyme, oregano, salt, and pepper.
4. – Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the beef and vegetables are tender.
5. – Taste and adjust seasoning as needed.
6. – Serve hot, garnished with fresh parsley if desired.
Notes
This soup can be made ahead of time and stored in the refrigerator for up to 4 days. It also freezes well for up to 3 months.
