Indulge in the rich, authentic flavors of Beef Birria Tacos with Consome – a classic Mexican dish that’s perfect for a cozy family dinner or your next taco night.
Ingredients
– 2 lbs beef chuck roast, cut into 1-inch cubes
– 4 dried guajillo chiles, stemmed and seeded
– 2 dried ancho chiles, stemmed and seeded
– 1 white onion, diced
– 4 garlic cloves, minced
– 2 tsp ground cumin
– 2 tsp dried oregano
– 1 tsp ground cinnamon
– 1 tsp ground cloves
– 1 tsp salt
– 1/2 tsp black pepper
– 16 corn tortillas
– Chopped onion, cilantro, and lime wedges for serving
Instructions
1. 1. In a large pot, cover the dried chiles with hot water and let soak for 30 minutes.
2. 2. Drain the chiles and add them to a blender with the onion, garlic, cumin, oregano, cinnamon, cloves, salt, and pepper. Blend until a smooth paste forms.
3. 3. In a large Dutch oven or heavy-bottomed pot, brown the beef cubes over medium-high heat until deeply caramelized on all sides, about 8-10 minutes.
4. 4. Pour the chile paste over the beef and stir to coat. Add enough water to just cover the beef. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the beef is very tender.
5. 5. Using two forks, shred the beef in the pot. Taste and adjust seasoning as needed.
6. 6. To serve, warm the tortillas and top with the shredded beef birria. Garnish with chopped onion, cilantro, and a squeeze of lime. Serve the consome broth alongside for dipping.
Notes
For extra flavor, toast the dried chiles in a dry skillet for 1-2 minutes before soaking. You can also use a combination of beef and lamb for the birria.
