Ingredients

– 1 cup pearl barley

– 4 cups low-sodium chicken or vegetable broth

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 carrots, peeled and diced

– 3 celery stalks, diced

– 3 cloves garlic, minced

– 1 teaspoon dried thyme

– 1 bay leaf

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot, bring the broth to a boil over high heat. Add the barley, reduce heat to medium-low, and simmer for 20-25 minutes, or until the barley is tender.
