Description

Juicy barbecue meatballs paired with a creamy, tangy avocado goddess sauce make for a delicious and satisfying 20-minute meal.


Ingredients

– 1 lb ground beef

– 1/2 cup breadcrumbs

– 1/4 cup finely chopped onion

– 2 cloves garlic, minced

– 1 tsp paprika

– 1 tsp chili powder

– 1/2 tsp salt

– 1/4 tsp black pepper

– 2 avocados, pitted and diced

– 1/2 cup sour cream

– 2 tbsp lime juice

– 1/4 cup chopped cilantro

– 1 tbsp honey


Instructions

1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. – In a bowl, combine the ground beef, breadcrumbs, onion, garlic, paprika, chili powder, salt, and pepper. Mix well and form into 1-inch meatballs.

3. – Place the meatballs on the prepared baking sheet and bake for 12-15 minutes, until cooked through.

4. – In a food processor, combine the avocado, sour cream, lime juice, cilantro, and honey. Blend until smooth and creamy.

5. – Serve the barbecue meatballs warm, topped with the avocado goddess sauce. Enjoy!

Notes

The meatballs can be made ahead of time and reheated before serving. For a spicier sauce, add a pinch of cayenne pepper.
