Description

Indulge in the classic flavors of Baked Oysters Rockefeller, a timeless seafood appetizer that’s rich, creamy, and bursting with cheesy goodness.


Ingredients

– 24 fresh oysters, shucked

– 4 tbsp unsalted butter

– 2 shallots, finely chopped

– 2 cups fresh spinach, chopped

– 1/2 cup grated Parmesan cheese

– 1/4 cup panko breadcrumbs

– 2 tbsp lemon juice

– Salt and pepper to taste


Instructions

1. 1. Preheat the oven to 400°F (200°C).

2. 2. In a skillet, melt the butter over medium heat. Add the chopped shallots and sauté until translucent, about 3-4 minutes.

3. 3. Add the chopped spinach and continue cooking until wilted, approximately 2-3 minutes.

4. 4. Remove the skillet from heat and stir in the Parmesan cheese and panko breadcrumbs until well combined.

5. 5. Arrange the shucked oysters on a baking sheet. Spoon the spinach-cheese mixture evenly over the top of each oyster.

6. 6. Bake for 12-15 minutes, or until the topping is golden brown and the oysters are cooked through.

7. 7. Squeeze a bit of lemon juice over the baked oysters just before serving.

Notes

For extra flavor, you can add a dash of Pernod or white wine to the spinach-cheese mixture. Serve the Baked Oysters Rockefeller immediately for the best texture and taste.
