Ingredients
– 4 (6-ounce) cod fillets
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1/2 teaspoon paprika
– Salt and black pepper, to taste
– 1/2 cup unsalted butter, softened
– 2 tablespoons freshly squeezed lemon juice
– 2 tablespoons chopped fresh dill, plus more for garnish
– 1 garlic clove, minced
– Lemon wedges, for serving
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. Pat the cod fillets dry and place them on a baking sheet. Drizzle with olive oil and season with garlic powder, paprika, salt, and black pepper.
3. 3. Bake the cod for 12-15 minutes, or until it flakes easily with a fork.
4. 4. While the cod is baking, make the lemon-dill sauce. In a small bowl, combine the softened butter, lemon juice, 2 tablespoons of chopped dill, and minced garlic. Stir until well blended.
5. 5. Serve the baked cod fillets warm, topped with the lemon-dill sauce. Garnish with additional fresh dill and lemon wedges.
Notes
– For a richer sauce, use 3/4 cup unsalted butter instead of 1/2 cup.
– Experiment with different herbs, such as parsley or chives, in the sauce.
– Bake the cod for an extra 2-3 minutes if you prefer it more well-done.
