Description

Tender, flavorful baked cajun salmon fillets are perfectly complemented by a cool, creamy avocado lime sauce in this easy and delicious 30-minute meal.


Ingredients

– 4 salmon fillets

– 2 tbsp cajun seasoning

– 1 avocado, pitted and diced

– 1/4 cup lime juice (about 2 limes)

– 1/4 cup olive oil

– 2 tbsp chopped fresh cilantro

– 1 garlic clove, minced

– Salt and pepper to taste


Instructions

1. 1. Preheat oven to 400°F.

2. 2. Pat the salmon fillets dry and season both sides generously with the cajun seasoning.

3. 3. Place the seasoned salmon on a parchment-lined baking sheet and bake for 12-15 minutes, until the salmon is cooked through and flakes easily with a fork.

4. 4. In a food processor or blender, combine the avocado, lime juice, olive oil, cilantro, and garlic. Blend until smooth and creamy. Season with salt and pepper to taste.

5. 5. Serve the baked cajun salmon immediately, drizzled with the avocado lime sauce. Enjoy!

Notes

For a spicier sauce, add a pinch of cayenne pepper to the avocado lime mixture. The sauce can also be made ahead of time and refrigerated until ready to serve.
