Description

Baghali Ghatogh is a beloved Persian dish that combines tender green beans and creamy eggs in a delightful one-pan meal. This easy-to-prepare recipe delivers a satisfying and comforting dish bursting with flavor.


Ingredients

– 1 lb fresh green beans, trimmed and cut into 1-inch pieces

– 6 large eggs

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tsp ground turmeric

– 1 tsp ground cumin

– 1/4 cup fresh parsley, chopped

– 1/4 cup fresh dill, chopped

– Salt and pepper to taste

– Olive oil for cooking


Instructions

1. – In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

2. – Add the minced garlic and sauté for an additional minute until fragrant.

3. – Stir in the green beans, turmeric, cumin, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the beans are tender.

4. – Create wells in the bean mixture and carefully crack the eggs into the wells. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.

5. – Remove from heat and gently fold the eggs into the bean mixture.

6. – Garnish with chopped parsley and dill. Serve immediately with warm, crusty bread.

Notes

For a richer dish, you can add a tablespoon of butter or cream to the egg mixture. Adjust the cooking time for the eggs based on your preference, from runny to fully cooked. This dish can be enjoyed for breakfast, lunch, or dinner.
