Ingredients
– 6 large eggs, separated
– 1/2 cup freshly grated Parmesan cheese
– 2 tablespoons chopped fresh chives
– 4 slices bacon, cooked until crispy and crumbled
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
Instructions
1. – Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. – In a medium bowl, beat the egg whites with an electric mixer until stiff peaks form.
3. – In a separate bowl, whisk the egg yolks, Parmesan cheese, chives, salt, and pepper until well combined.
4. – Gently fold the egg yolk mixture into the whipped egg whites until just combined.
5. – Scoop the mixture onto the prepared baking sheet, forming 6 mounds.
6. – Sprinkle the crumbled bacon over the tops of the egg clouds.
7. – Bake for 12-15 minutes, or until the egg clouds are puffed and lightly golden.
8. – Serve immediately, garnished with additional chives if desired.
Notes
For a creamier texture, use full-fat Parmesan cheese. You can also experiment with different herb combinations, such as rosemary or thyme.
