Ingredients
– 8 slices of bread
– 8 slices of bacon, cooked until crispy
– 1 cup shredded cheddar cheese
– 2 avocados, mashed
– 1 lime, juiced
– 2 tablespoons chopped cilantro
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons unsalted butter, softened
Instructions
1. – Cook the bacon in a skillet until crispy. Drain on paper towels and crumble.
2. – In a medium bowl, mash the avocados. Stir in the lime juice, cilantro, salt, and pepper.
3. – Spread the butter on one side of each slice of bread.
4. – Place 4 slices of bread, butter-side down, on a clean surface. Top each with a layer of shredded cheese, followed by the bacon crumbles and a generous amount of the guacamole.
5. – Top with the remaining 4 slices of bread, butter-side up.
6. – Heat a large skillet or griddle over medium heat. Cook the sandwiches for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted.
7. – Slice in half and serve immediately.
Notes
For extra flavor, you can add a sprinkle of smoked paprika or cayenne pepper to the guacamole. Leftovers can be stored in the refrigerator for up to 3 days.
