Ingredients
– 1 lb fresh asparagus, chopped into 1-inch pieces
– 1 medium onion, diced
– 3 cloves garlic, minced
– 4 cups vegetable broth
– 1 cup heavy cream
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. 1. In a large saucepan, sauté the onions and garlic in a bit of olive oil over medium heat until softened, about 3-5 minutes.
2. 2. Add the chopped asparagus and vegetable broth. Bring the mixture to a boil, then reduce heat and simmer for 10-12 minutes, until the asparagus is very tender.
3. 3. Using an immersion blender (or carefully transfer the soup to a blender), blend the soup until smooth and creamy.

Notes
