Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 cups peeled and diced apples (about 2-3 medium apples)
– For the Crumble Topping:
– 1/2 cup all-purpose flour
– 1/4 cup packed brown sugar
– 1/4 cup unsalted butter, cubed
– 1/2 teaspoon ground cinnamon
Instructions
1. – Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick cooking spray.
2. – In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.
3. – In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
4. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the diced apples.
5. – Pour the batter into the prepared loaf pan and spread it evenly.
6. – In a small bowl, make the crumble topping by combining the 1/2 cup of flour, brown sugar, cubed butter, and 1/2 teaspoon of cinnamon. Use your fingers or a fork to mix the ingredients until they resemble coarse crumbs.
7. – Sprinkle the crumble topping evenly over the top of the batter.
