Description

Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1 cup chopped raw almonds

– 1 cup chopped maraschino cherries, drained


Instructions

1. – Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. – In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.

3. – Beat in the egg and vanilla extract until well combined.

4. – In a separate bowl, whisk together the flour, baking powder, and salt.

5. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

6. – Fold in the chopped almonds and cherries.

7. – Scoop the dough by the tablespoonful onto the prepared baking sheet, spacing them about 2 inches apart.

8. – Bake for 12-15 minutes, or until the cookies are lightly golden around the edges.

9. – Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a festive touch, you can add a maraschino cherry on top of each cookie before baking. These cookies can be stored in an airtight container at room temperature for up to 5 days.
