Ingredients
– 2 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup milk
– Red, white, and blue sprinkles
– Blue raspberry ‘sparkler’ candies
Instructions
1. Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes.
4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla.
5. Alternate adding the flour mixture and milk to the butter mixture, mixing just until incorporated.
6. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.
7. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean.
8. Allow the cupcakes to cool completely, then top each one with a blue raspberry ‘sparkler’ candy and a sprinkle of red, white, and blue sprinkles.
